Back to School Easy Recipes for Lunch and Dinner! | Huntington & Smithtown Moms

We made it through our first week Back to School!

Although we are sad to see summer go, many of us are ready to get back to a working routine.

Getting back into the swing of things, means meal prepping and having easy, fast dinner and lunchbox recipes on hand in our home.

A few of our favorites are below!  We love using our Bentgo boxes to pack lunches, and store food ready to heat.

I also use these reusable ziplock bags and Lunchskins disposable pouches for things like snacks, sandwiches and fruit.

    1. Sunbutter and Jelly Sandwiches– Our easiest, packable lunch is sandwiches! These sunbutter and Jelly sandwiches our some of our absolute favorites- and school friendly! we use Laurel’s Butter (shop local!) and we always include fruit and a little dessert! (these alphabet cookies are the Trader Joe’s Cinnamon Schoolbook Cookies!  We also use these animal cookie cutters from Michael’s to make lunchtime just a little more fun!


    2. Bucatini with Spinach and Burrata-What’s easier than a Pasta dish for Dinner! I know our son is still pretty much obsessed with pasta-I make this at least once a week because there is no prep time and it takes about 10 minutes to make- I sue one whole pack of Bucatini, purchase fresh Burrata from Whole Foods, and throw in some spinach for good measure!  Once the pasta is cooked, i drain, toss with olive oil, salt and pepper to taste.  If i pack this for lunch the next day, I avoid the burrata, as it doesn’t pack as great in a lunchbox.

 

  1. Chicken Fried RiceGrilling chicken at the beginning of the week saves time and makes it possible to put together different meals quicker. We grill chicken in bulk and use it in a variety of ways.  For the rice, I prepare one cup of rice ahead of time (without anything added).  I then toss a half of cup of carrots, 1/4 cup of peas and 1/4 cup of corn in a skillet with some vegetable oil.  Separately, I scramble 2 eggs. Once the vegetables are mixed well, I add the egg and begin to add soy sauce- depending on which one you use will determine how much to add.  I use the Trader Joes and add about 1/4 cup for nice coloring- also note: no additional salt is needed. I cut up our already made chicken and add to the rice.  Again, for packing lunch, I add another side of veggies and a fruit! I love our Bentgo Glass for packing things that will be reheated
  2. Grilled Chicken, Arugula and Avocado Salad
    Another reason we love grilling chicken ahead of time.  For an easy, on the go salad, I use our Bentgo Bowl.  It’s perfect because it comes with utensils! For this salad I use either a mixed greens salad, or arugula and top with a half avocado, grilled chicken and some Dill Yogurt on the side.
  3. Smoothies
    The easiest breakfast- and very versatile is smoothies. I usually hide veggies (spinach, carrots, celery) in these breakfast smoothies.  Our favorite contains Malk Almond Milk, half a banana, 1/4 cup of hemp hearts, 1/4 cup of strawberries, sun butter (or peanut butter), a handful of blueberries, 1/4 tbsp vanilla extract and 1/2 cup of spinach.
